The window is narrow and fixed at both ends
An operation that starts at three has a genuinely short gap. The previous day's activity may not finish until mid-evening, and the premises need to be clear and ready well before the first staff arrive. That leaves a window of a few hours with a hard boundary at each end, which is an unusual constraint and one that has to be respected rather than negotiated.
Because the window is fixed, the task list has to be built to fit it rather than the other way around. A schedule that assumes an open-ended evening will run into the start of the next day, and on a food-handling site that is not simply inconvenient. Sizing the attendance realistically against the available hours is the first thing to get right.
